Bhubaneswar's food culture is shaped by the Odia culinary tradition and the religious character of a city that has been a temple complex since the 7th century. Dalma, a lentil and vegetable stew cooked without onion or garlic and seasoned with ghee and panch phoron, is the cornerstone of Odia cooking; it is prepared daily in temple kitchens across the city and reflects the Vaishnava culinary tradition that defines much of Odisha's food heritage. Macha jhola, a turmeric-heavy fish curry; santula, a light vegetable stir-fry; and chhena poda, a caramelised cottage-cheese dessert baked in a clay pot that is Odisha's own invention, represent the range of an Odia meal. The mahaprasad of the Jagannath Temple in nearby Puri — a 56-dish offering cooked in clay pots over wood fire — is the spiritual high point of Odia food culture. Bhubaneswar's restaurant geography divides between the old town and the planned new city. Saheed Nagar, Janpath, and Unit 4 anchor the city's mid-market restaurant belt. The newer areas around Jaydev Vihar and Patia have produced a café and casual-dining scene serving the IT services workforce that has settled in these zones since Infosys, TCS, and other IT companies established campuses. The city is growing rapidly as Odisha's administrative capital, and new restaurant openings are accelerating.
