What Is Table Turnover Rate? Formula & How to Improve It

The Table Turnover Rate Formula

Table turnover rate (also called table turn or seat turnover) tells you how efficiently your dining room converts a fixed number of seats into paying parties. A higher turnover means more guests served from the same floor space during peak hours — which usually means more revenue without adding a single table.

There are two common ways to express it, and both are valid as long as you are consistent:

  • Table turnover = Number of parties served ÷ Number of tables (over a service period)
  • Seat turnover = Total covers (guests) served ÷ Number of seats (over a service period)
  • Average dining duration ≈ Length of service period ÷ Turnover rate

Note: Measure it per service period — lunch and dinner separately — because turnover behaves very differently across dayparts. A weekday lunch turns faster than a leisurely weekend dinner.

A Worked Example

Take a 30-table casual dining restaurant during a 3-hour dinner service (7 PM to 10 PM). Over the evening, the host seats 90 parties in total. Table turnover = 90 ÷ 30 = 3.0. Each table was, on average, occupied by three different parties across the evening.

You can convert that into an average dining duration: a 3-hour (180-minute) service divided by a turnover of 3.0 gives an average of 60 minutes per party. If you improve turnover to 3.5 — by trimming that average to about 51 minutes through faster ordering and billing — the same dining room now serves 105 parties in the evening.

If your average order value is ₹700, those extra 15 parties are 15 × ₹700 = ₹10,500 in additional revenue in a single dinner service, from the same tables, staff and rent. Over a month that is a material sum with essentially zero added fixed cost.
